No-Bake Snickers Pie

{Refined Sugar-free, Gluten Free, Vegan, Paleo, Raw!}

 

If you read the word Snickers and were already on-board, this dessert recipe is right up your alley! But take note all you health lovers, there’s no actual Snickers in here.

Introducing No-Bake Snickers Pie, a sugar-free, vegan and gluten-free recipe found over on One Green Planet. And it’s paleo and raw too! Couldn’t fit all of that in one sentence.

No-bake recipes are great for those who’re in a hurry, or others who might not be as comfortable with their culinary skills yet, and want easier ways to get delicious results.

This recipe is not only fun to make, but super easy too and will be a favorite among family and friends. So what do you need to get started?

The crust is a rich blend of cacao powder, pitted Medjool dates, sea salt, your preferred nuts, vanilla extract, and one of our favorites—unsweetened dried coconut. Yum!

The caramel layer—yes you read right—requires more Medjool dates, unsalted almond butter, sea salt, and coconut oil.

Now, try to stop salivating because the last layer is going to send you over “Taste Mountain’s” edge!

Peanut butter mousse is the final stage and maple syrup, vanilla extract, full-fat coconut milk, sea salt, and of course peanut butter, bring this recipe to a place that is decadence in all its glory.

Liz Moody, the recipe creator, shared that she sometimes has a slice of this yummy dessert for breakfast; really can’t blame her. Don’t you want to eat it all the time? It’s definitely healthy enough for it.

INGREDIENTS

Crust:

  • 5 tablespoons cocoa powder
  • 12 Medjool dates, pitted
  • 1/2 teaspoon sea salt
  • 1 cup nut of choice (I like cashews and almonds best, with walnuts shortly behind – you can even mix nuts if you wanna get crazy!)
  • 1 cup unsweetened dried coconut
  • 1 teaspoon vanilla extract

Caramel Layer:

  • 10 Medjool dates, pitted, soaked in boiling water for 10 min and then drained
  • 3 teaspoons coconut oil
  • 2 teaspoons vanilla extract
  • 3 tablespoons unsalted almond butter

Peanut Butter Mousse:

  • 2 cans full-fat coconut milk, put in fridge overnight
  • 3/4 cup peanut butter
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch sea salt
