Peanut Butter Pumpkin Oat Muffins

{Refined Sugar and Gluten Free}

 

Muffins can be a delicious choice for breakfast or as a snack and when they’re refined sugar and gluten-free, it’s even better!

Over on glutenfreejess.com, Jessica Schlangen featured a great muffin recipe with her Peanut Butter Pumpkin Oat Muffins with Dark Chocolate. Yea, it’s a mouthful, but believe us, you’ll want to have your mouth full of these scrumptious treats.

 

GlutenfreeJess swears it takes around ten minutes to prepare these sugar free and gluten-free muffins, which is fantastic if you’re in a hurry and want to throw together something quickly. With ingredients like canned pumpkin, eggs, pure maple syrup, dark chocolate chips, sea salt, gluten-free rolled oats, powdered peanut butter (you can probably sub regular peanut butter for this), and other baking necessities at hand, before long you’ll be mixing your way to the finished product!

Ingredients
  • 1½ cups canned pumpkin
  • 2 eggs
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ½ cup gluten free rolled oats
  • 1 cup powdered peanut butter (PB2)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup dark chocolate chips (refined sugar free)

 

Muffins like these are also great if you’re having a long day, aren’t able to eat a proper lunch, or haven’t eaten much else for the day, as they contain ingredients that are full of fiber, protein, and are heart-healthy to boot.

Total preparation time (with baking) is just over thirty minutes and when you’re done, you should have about twelve delectable muffins.
